But what about Food Republic?The name alone doesn’t give away too much, which I suspect is part of the reason why it’s been nearly empty every time I’ve eaten there — and that’s a shame because it’s one of my favorite restaurants at sea. Cruisers are truly missing out.So what, exactly, is Food Republic, and what kind of cuisine does it offer? ASHLEY KOSCIOLEK/THE POINTS GUYFood Republic is an added-fee restaurant found on several of NCL’s vessels. Because it’s hardly ever crowded, it’s one of the few dining venues on the line’s ships for which you likely won’t need reservations.The theme is international street food. Although the menu items hail from various countries — including Mexico, Germany and Peru — options lean heavily Asian, with Chinese, Japanese, Korean and Thai selections available. Plus, there’s a sushi bar.When you arrive at Food Republic, you’ll be seated in a large dining room filled with a mix of high-top tables and standard ones. The decor is spartan and on the modern side.Guests can order items from a touchscreen tablet. You don’t need to order your entire meal at once, so consider starting with a couple of items and adding more if you’re still hungry. The dishes take almost no time to prepare, and they show up as they’re ordered and ready, rather than in a traditional starter-main-dessert cadence. (In other words, if you order three plates and dessert all at the same time, you’ll receive them as they’re made, which might mean you get your dessert early in the meal.)Don’t confuse Food Republic with Indulge Food Hall, a restaurant with a similar concept found on Prima Class vessels. That dining venue is similar to Food Republic in that it’s street food-themed, and you order from a touchpad. The difference is that you seat yourself, and it’s complimentary to dine there.Interestingly, Prima Class ships have both venues, which could also explain why Food Republic is almost always empty.     What is Gault & Millau?It was founded by two restaurant critics, Henri Gault and Christian Millau in 1965. The two journalists issued the Gault Millau Guide of Courses. Today, the brand is the leading authority and critique on fine dining and operates in more than 15 territories globally.It uses a point system to rate a restaurant from 0 to 20 points according to the French school grading system.Today the Gault&Millau trademark encompasses an annual French guide, eight regional guides, 15 licences worldwide, the Gault&Millau Academy (established by chefs who have been promoting French gastronomy for over 25 years) and the 109, the guide highlighting 109 young chefs, embodying the revival of French gastronomy in Paris, and PoP by Gault&Millau, offering a selection of atmospheric spots of the moment.What are restaurants ranked on?The points are awarded strictly based on the quality of the food. Based on this rating, high ranking restaurants may display one to five toques (chefs hats). Gault&Millau does not accept payment for listing restaurants and all visits by Gault&Millau critics are fully paid for.The restaurant receives one toque for 11 points. A chef honoured in Gault&Millau is also typically qualified as a gourmet chef.How is this different from other restaurant raking systems?Gault&Millau has been considered more purist due to the main system being based purely on the quality of the food at the restaurant. The introduction of the Gault&Millau guide and its points system reduced the focus on the luxury of the surroundings.Is it possible to achieve 20 points?When Gault and Millau themselves were in charge of the publication, they never awarded anyone a score of 20 points, as they claimed that perfection was impossible to achieve.However, in 2004, two restaurants, both belonging to chef Marc Veyrat, are listed with this score. These are the Auberge de l’Eridan and La Ferme de Mon Pùre.What is considered a low rating?Restaurants that are given a rating of fewer than 10 points are rarely listed. Although the points awarded are based on the quality of the food, the guide also includes comments about service, price or the atmosphere of the restaurant. Based on this rating, high-ranking restaurants may display their one to four toques.Which other countries have a Gault&Millau guide?In addition to France, the brand also has guides for various other countries, like Switzerland, Germany, Croatia, Austria and the Benelux. The guide is also available in Japan, Australia, Italy, Poland, Greece, Switzerland and more.Why is it coming to the UAE?According to the president of Gault & Millau, Vladislav Skvortsov, the Middle East’s dining scene is very dynamic and is growing at speed. He sees a mounting appetite for premium and fine dining in the region, specifically in the UAE. This, coupled with a deep appreciation of food craftsmanship, makes the UAE a natural and long-awaited move.
