This straightforward recipe for apple pie is from the vegan chef and cookbook author Chloe Coscarelli. It calls for storebought crusts, so you really can throw it together and have it in the oven in about 15 minutes.

Yield:One 9-inch pie

  • ½cup sugar, plus extra for sprinkling
  • 2tablespoons all-purpose flour
  • 1teaspoon ground cinnamon
  • 6apples, peeled and thinly sliced
  • 2store-bought pie crusts (I prefer the vegan brand Wholly Wholesome)
  • Soy milk (optional, for brushing)

Preparation

    Preheat oven to 375 degrees. Lightly grease a 9-inch pie pan.

    Whisk together sugar, flour and cinnamon in a large bowl. Add apples and mix with a large spoon until apples are evenly coated.

    On a lightly floured surface, roll out 1 dough until it is about ⅛ inch thick. Carefully lift the dough and fit it into the prepared pan, letting about 1 inch hang over the sides. Fill the pie shell with the apple filling.

    On a lightly floured surface, roll out the second disc of dough until it is about ⅛ inch thick and cut out eight 1-inch strips. My lattice technique does not require any weaving. Instead, lay four strips horizontally on top of the filling, leaving about ½ to ¾ inch between strips. You may want to use a metal spatula to transfer the dough strips from your work surface to your pie. Lay the remaining four strips diagonally over the first four strips, creating a diamond-like shape between strips. Fold the overhanging dough over the edges of the lattice top. Crimp the dough between your two index fingers to make a decorative border

    Brush the top and edges of the pie crust with nondairy milk and sprinkle with sugar for an extra sweet and crisp top. Bake for 50 to 55 minutes, until the crust is nicely browned.

Always use this method of thinly slicing fruit and baking it in the pastry. Always gives a good result and no juice or other fluid is needed. My favourite way with fruit.

Nailed it on my 6th try:Honeycrisp apples picked that day from a neighbor’s orchard.Maine Pie Company gluten free crust plus Bob’s for top lattice.Much less cane sugar (1/3 cup) and a bit more cinnamon (1.2 tsp.).Unsweetened vanilla almond milk for top brush, with sugar and a pinch of cinnamon for the top sprinkle.I am an experienced kitchen guy, but never baked till April 2020.My wife is in heaven.Nothing as American as a homemade “Biden-Harris Victory” Apple Pie!

I made this and it was great! Found the exact crust at my local Coop. Made filling, adding 1 tsp grd ginger, used brown sugar since it's what I had. But by the time I was ready to assemble top crust was too soft! So I scraped it out of the tin, rolled it in a ball and thru the bottom half of the pie and the top crust, now a ball, into my freezer for 20 min. THEN pulled it out and had this CRAZE idea to just slice the dough thinly, like the apples and arrange it on the top. It was amazing. 65m.

Great recipe to use up apples that you overbought. I've used all kinds of eating apples. Still as good as with the traditional baking apples.

Crazy easy! I whipped this out so quickly it was in the oven before I knew it. Easy clean up. With whipped cream and vanilla ice cream on the side, everyone loved.

It was excellent. 5 stars. I sprinkled the turbinado brown sugar mixed I. a bit of yogurt & almond/coconut milk . Coated over.Also added a few droplets of butter over the sliced apples before laying over the crust. Devine.

So easy! I sliced the apples with a mandoline and used a regular Wegman's refrigerated premade crust. Added nutmeg based on the reviews. Delicious!

Wholly Wholesome and most store-bought crusts use palm oil. If anyone knows of a good store-bought crust that doesn't, please post here. I am good at pie crusts from scratch, but sometimes it's nice to be able to pick one up when buying the apples and pop a pie in the oven in a few minutes when I get home.

Delicious. Very simple and quick to prep. I added the juice of a lemon and doubled up the cinnamon powder. I wanted to make sure it was jammy. The key is to slice the apples thin, as suggested. I only used the bottom of a commercial pie crust. 50 minutes was enough.

Delicious treat. I followed ingredients and amounts exactly including Wholly Wholesome crusts.To create the strips, I used a generous amount of Bob’s 1to1 flour and wide blade knife. Ease them up, then folded into 1/3s to prevent breaking. By mistake, I latticed crisscross, yielding less to crimp into bottom. To fix, I used a fork to re-edge the crust, brushed with soy milk, sprinkled with sugar per instructions. Guests were wowed by beauty of a double crusted vegan, gluten free pie!

I used this recipe with 6 large Honeycrisp apples, added juice from one lemon, Melissa Clark's all butter crust and Sam Sifton's cooking technique (425 for 20 then 375 for 30.) I threw some tin foil over when it was starting to brown. Although I am not an experienced cook, this was the star of Thanksgiving. Thank you NYT!

I bought a pre-made pie crust in the pan, then made the apple filling. The beginning wasn’t a problem, but since I didn’t have a second roll-out pie crust, I couldn’t make the lattice. Instead I prepared a crumble topping recipe by Mark Bittman.Recipe follows:1/2 teaspoon cinnamon1/2 cup rolled oats2/3 cup minus 1 tbsp. sugar5 tbsp. cold unsalted butter, cut into bitsCombine ingredients in food processor and pulse a few times. (To make by hand, soften butter first, work with fingers.
